Fruit Sourcing
If needed, we are able to secure premium grapes from some of Napa Valley's finest vineyards
through our long associations with growers and winery clients.
Processing
All grapes are hand sorted to make certain that only the ripest, most intact berries are sent to the
crusher/destemmer and then on to a fermenter sized to accommodate your production. After
fermentation, the red must is gently pressed in either a small horizontal basket press or a pneumatic
bladder press.
Barrel Aging
From the press, the wine is carefully transferred into 60-gallon barrels for aging. If a new barrel is
preferred for the finished wine, we offer guidance in the selection process and will purchase it for
you at our cost. Our services include barrel storage.
Bottling
Because bottling is one of the most crucial parts of the winemaking process, we take great care to
oversee the transfer of wine to bottle using our state-of-the-art bottling line.
Licensing
Legal guidelines must be followed in the creation of labels. Strict regulations established by government
agencies are in place concerning requirements on front and back labels, size of typeface,
placement and relationship of correct wording, "warning" statements, etc . We help our clients gain
the Federal Certificate of Label Approval (COLA) from the Tax and Trade Bureau (TTB). We are
experts in the field and work to insure labels are properly submitted and approved as part of our
service.
If label design is not a main focus, we have a properly formatted "generic" wine label that is available
and ready for approval with the insertion of your brand name, vineyard designation, and wine
variety

Client Involvement
Clients can decide upon their level of involvement from harvesting and processing fruit to making
production decisions such as destemming and pressing techniques, barrel selection, fining, filtration
and final blending. We encourage clients to sample their wines out of barrel with our winemakers.
Regular, Ongoing Consultation
Throughout the entire winemaking process, we invite our clients to stay involved in all aspects. We
provide opportunities to taste out of barrel and to discuss the progress with our winemakers.
